Twisted Sloppy Joes

If you are looking to change up your traditional tomato-based Sloppy Joe, this is the recipe for you. Over a decade ago, my now husband actually introduced me to the combination of ground beef and chicken gumbo soup. At the time, I thought it was the most bizarre thing I had ever heard of, but with time it grew on me. This twist on the classic sloppy joe is part of our family’s regular meal rotation. One thing I appreciate about it is the fact that it is a great make-ahead meal! I will prepare this meal on a Sunday for Monday or Tuesday night, just throw in the microwave to warm up before serving! I am all about working smarter not harder. 

You will need..

  • 2 pounds ground beef
  • 2 cans Campbell’s Chicken Gumbo Soup
  • 1 soup can of water
  • ¼ cup ketchup
  • 2-3 tbsp mustard (I use dijon)
  • 1/2 tsp pepper
  • salt/pepper to taste (for seasoning the beef)

Start with browning the ground beef in a large skillet; season with salt and pepper. When the beef is fully cooked, drain the grease if you wish. I don’t usually have to worry about this step because the beef we raise is typically lean enough to skip draining. 

Pour in both cans of Chicken Gumbo Soup and then use one of the cans to measure out the water before adding it to the beef mixture. 

Next, add the ketchup, mustard, and pepper. Stir everything together.

Bring the mixture to a simmer over medium-low heat and then cover and let it simmer for 25-30 minutes, stirring occasionally.

After the liquid has simmered down and has reached your preferred consistency, serve on your favorite roll with sliced pickles and cheddar cheese. Twist it up by serving over mashed potatoes or over a slice of bread.

This makes a great freezer meal! If you plan to freeze or store in the refrigerator after cooking has finished, let the contents cool and then store flat in quart or gallon freezer bags. Defrost in the refrigerator and then warm in the microwave or in a skillet.

Instructions
 

  • Brown the ground beef in a large skillet; season with salt and pepper.
  • Drain the grease, if you wish, I like to live dangerously and usually skip this step.
  • Add the cans of Chicken Gumbo Soup, and then use the cans to measure out the water.
  • Next, add the ketchup, mustard, and pepper. Stir everything together.
  • Bring the mixture to a simmer over medium-low heat. Then cover and let it simmer for 25-30 minutes, stirring occasionally.
  • Serve on your favorite roll with sliced pickles and cheddar cheese. Twist it up by serving over mashed potatoes or a slice of bread.
