Pressure Cooker Sausage and Potato Soup

Ingredients
  

  • 1 lb ground pork sausage defrosted (plain or hot)
  • 6 Yukon Gold potatoes scrubbed and cubed
  • 1 yellow onion diced
  • 1 tsp garlic powder
  • ¼ tsp Oregano
  • Salt and Pepper to taste
  • 32 oz chicken broth
  • 1 ½ cup frozen kale
  • 1 ½ cup half and half or heavy cream

Instructions
 

  • Set the pressure cooker to the saute setting for 10 minutes. Add the pork sausage, onion to begin browning. Then add the salt, pepper, and garlic seasonings.
  • While the pork is cooking, scrub and cube the potatoes.
  • As the pork finishes browning, add the potatoes, oregano, and finally the chicken broth. Stir well.
  • Place the lid on the pressure cooker. Be sure to press down, twist, and flip the valve on the top to ‘sealing’.
  • Set the time for 10 minutes of pressure cooking. After the pressure cooking has finished, flip the valve to ‘venting’ for a quick release.
  • When the pin has dropped, carefully remove the lid. Stir in the frozen kale, and finish by adding the half and half or heavy cream.
